Ingredients: (serves 2)
1/2 lb Calamari, raw & cleaned
1 egg whisked in a small bowl
2 ounces or ~1/2 cup (pre-processed) Dry roasted fava beans - processed in high speed blender or food processor OR use Chickpea Crumbs (these options add protein and fiber)
Directions:
Place bean crumbs in a large bowl
Slice calamari into rings (~1/2 inch thick)
In batches of 4-5 rings, dip in egg
Allow excess egg to drip off calamari rings as you transfer them to bowl with bean crumbs. One by one, coat calamari with bean crumbs.
Place in air fryer in a single layer (may need two batches). Air fry for 5-7 mins on 400 degrees F.
Nutrition: 220 calories per serving, 23 g protein, 7 g of fiber
Serving suggestion: Greek Horiatiki salad (chopped cucumbers, tomato, onion, olives, red vinegar, salt, oregano, olive oil drizzle, and sprinkle of feta)
