
Eating meat can be perfectly fine for health, it all depend on how much of it you're eating. Here's an EASY way to enjoy your favorite comfort food while still eating nutrient dense foods that aid in digestion, immune health, and have you feeling great! The secret? Adding lentils and mushrooms are an easy way to boost the nutrient density of your meat based meals.
Ingredients:
1 lb organic ground turkey or beef
1 cup lentil, cooked *time saver: already cooked lentils
2 carrots
1 large sweet onion
1 Scallion, chopped

3 cloves garlic
4 medium button mushroom
Optional: 1 Tbsp Trader Joe's bbq seasoning
1 tsp garlic powder
1 oz chickpea crumbs (you can also used process dried fava beans or oats)
1 egg
4 Tbsp bbq sauce
1/4 cup ketchup
Topping: 6 Tbsp ketchup + 3 Tbsp bbq sauce
Directions:
Preheat oven to 400 degrees F.
In a large bowl add ground turkey, egg, processed pretzel, scallion, ketchup, bbq sauce, bbq seasoning, garlic powder, and cooked lentils. Mix well.
Add mushrooms to food processor and shred. Add to bowl.
Add garlic, onion, carrots to food process, pulse until finely chopped. Cook on saute pan for about 10 minutes. (you can add these veggies raw,

but cooking them adds flavor).
Add cooked veggies to bowl. Mix until everything is well combined.
Line a baking sheet with parchment paper.
Make 3 mini meatloafs.
Add extra bbq and ketchup and spread evenly on top of each loaf.
Cook for 20 mins. Remove from oven and apply a second layer of bbq and ketchup. Cook for another 15-20 minutes.
